Pinot Noir Rosé
Pinot Noir may be the “unicorn” varietal in the Finger Lakes, it’s the one variety that is hard to catch. The expression of Finger Lakes Pinot Noir is very unique, good flavor and color can be developed in this region, while a balance can be achieved because the sugar production never gets above a level to put the alcohol content over the top. This rosé is an excellent way to use this amazing fruit.

Bourbon Barrel Syrah
Syrah has a great tannin structure that is complimented by the smooth bourbon character that the Heaven Hill barrels gave during the months of aging. Our first Methode Champenoise, this delicate wine is only available in extremely limited quantity. Only 36 cases made.
The 2016 Blanc de Blanc, or “white from whites” was made in the traditional methode champenoise style from 100% estate grown Chardonnay grapes. The secondary fermentation began en tirage in May of 2017 and the wine has rested on the yeasts for 2 ½ years. Recently disgorged of the yeast and dosaged with .9% RS.
This Blanc de Blanc is classic in nature with yeasty notes of rich Brioche on the nose with a well balanced natural acidity along with a distinct minerality. This combination allows for aging as well as a wide range of pairings be it everything from shellfish to strongly aged cheeses, or as a glass of bubbly on its own

Lemberger (Blaufrankisch)
Lemberger is officially classified under the name “Blauer Limberger,” this red grape variety also goes by the synonyms “Lemberger” and “Blaufränkisch.” The late-ripening Lemberger probably originated in vineyards on the lower stretches of the Danube River. The grape was documented in Austria in the second half of the 18th century and is cultivated there to this day (as Blaufränkisch) in Burgenland and near Vienna.
This wine has a brilliant color, is full bodied fruit and aroma, and has been aged in oak for 6 months.

Himrod is a white table grape, released in 1952 by the New York Agricultural Experiment Station in Geneva, New York. It is seedless and known for ripening quickly and its sweet flavor. Himrod resulted from a cross of Ontario by Thompson Seedless, a particularly successful cross which resulted in the eventual release of four cultivars, the others being Interlaken, Romulus, and Lakemont.
We are the only winery who produce a wine from the Himrod grape! U-Pick the grapes or get them as juice for home winemaking.

Merlot
The Merlot grape is a close cousin to Cabernet Sauvignon in many respects, Merlot is able to mature in regions that are cooler than those required for Cabernet Sauvignon. Merlot usually has ripe berry components in the bouquet. It tends to be soft, fruity, and smooth in texture.
Aromas of dark cherry are encased in lovely smoky oak. Sweet cherry bursts at mid palate with genuine tannin that lingers on to a soft oak finish.

Muscat Ottonel
This fruit forward wine is very light and crisp with aromas of white peaches which is complimented by a subtle sweet herbal finish.
Grown on an ancient river delta, our Muscat Ottonel planting is a little over one-third acre on a very quick draining Howard series gravel soil. Morning sun on the site, along with quick-draining soil limits disease pressure allowing for clean fruit, despite the high susceptibility of this variety to downy mildew. Muscat Ottonel Vines have good yield and are early ripening. The vines are more cold hardy than other varietals in the Muscat family of Vitis vinifera making the Finger Lakes an ideal area for growing this light and crisp varietal. 2016 was a good year for this varietal and a good sugar level was reached. The young vines did show some signs of drought during the unusually dry growing season.

The site we chose to cultivate this variety is on the furthest down-slope of our original 1805 farm. The site is well drained with deep Howard series soils. This site is steep and protected from strong winds, which also allows for good air drainage, protecting the site from both high and low temperatures throughout the year. Being a mid-ripening variety, we are able to select optimal flavor and sugar levels a little better than with some of our more traditional red varieties which ripen at the end of the season.
Exhibiting flavors of berry and red fruit, this delightfully balanced rosé will be sure to please. Pair with cheese, salads and good company. Perfect for any occasion!
