One of the most recognizable red wine varieties, Cabernet Sauvignon originates in the Medoc region of Bordeaux. Small, thick-skinned, blue-black berries lead to a wine that is full bodied and slow to mature. The daughter of “Cabernet Franc” and Sauvignon Blanc, this variety is fuller with a nose of black fruit. Young, this wine can be harsh and tannic yet it will smooth out over time and is often blended with Cabernet Franc and Merlot to balance it out and does very well under oak. Ripening late in the year, it is usually harvested the 3rd to last week in October in the Finger Lakes. Recommended variety for dry lovers and winemaking enthusiasts.
BM-4X4 is a highly recommended yeast strain for this variety. Nutrient addition is strongly recommended if using this yeast.
