The “Black Cone” grape most notably of the Côte-d’Or region of Burgundy. Requiring a long, cool growing season, Pinot Noir is frustrating to grow and is susceptible to viruses, mildew and bunch rot. One benefit of this higher susceptibility is a higher level of antioxidant and resveratrol production during the season resulting in higher levels in the finished wine. This variety can be quite light in color and can be described as garnet color when young and turning deep red to brown as it ages. Pinot noir, is also the chief variety used in the production of high quality Champagne.

Wines produced are usually delicate, rich and aromatic, Pinot Noir is a medium-bodied wine with aromas of black cherry, currents and raspberry.
