This variety from the Bordeaux region is often overlooked as a very rich and full bodied wine. Being the parent of Cabernet Sauvignon, Cabernet Franc is a relatively low-yielding variety that usually ripens mid-late October in the Finger Lakes and does quite well because of its tolerance cooler temperatures.
Low in tannin and light in color, Cabernet Franc can have very intense aromas of raspberries, liquorice, and violets. This variety is often blended with Cabernet Sauvignon and Merlot, but also works well as a varietal.
